Role

The ideal candidate will be involved with preparing and assembling sushi dishes according to established recipes and presentation standards. The candidate will need to ensure the quality and freshness of all ingredients used in sushi preparation, as well as maintaining a clean and organized work area, including proper storage and rotation of ingredients.


Job description


  • In-depth knowledge of Japanese cuisine, sushi history, and sushi culture.
  • Familiarity with different sushi styles, such as nigiri, maki, sashimi, and temaki.
  • Ability to handle and prepare raw fish and seafood safely and responsibly
  • HACCP certification or food safety training is a plus.
  • Expert knife skills - these are important to be able to cut fish different types of fish expertly and precisely in order to bring out the best pieces of the fish.
  • The master sushi chef will have by now developed his own style for how to handle ingredients and wield the hocho;
  • He will also have become very comfortable interacting with guests and working closely within the sushi preparation team;
  • Neatness and accuracy are crucial.



Responsibilities

  • Cooked and presented all dispensed station menu food items.
  • Handle opening, maintaining, and closing of the sushi bar operations.
  • Prepared and presented all food items, hot and cold as per sushi restaurant standards and norms.
  • Quality and cleaning checks, training for the junior sushi chef


Qualifications

  • Knowledge of different sushi preparation techniques.
  • Extensive experience in the sushi industry.
  • Strong understanding of food safety and sanitation protocols.
  • Knowledge of English language.
  • Ability to create unique and innovative sushi creations.
  • Ability to work in a fast-paced environment.
